Delicious Italian Dish – Vegetable Lasagna Recipe

In many households, we often end up with extra rotis (Indian flatbreads) that go unused and eventually need to be discarded. However, you can easily transform these leftovers into a delicious and attractive item that can be served for evening snacks or packed in your child’s tiffin box. Today, we’ll learn how to make a vegetable lasagna using these leftover rotis.


  • Round rotis – 4 (of equal size)
  • Grated cheese – 1 cup
  • Tomato puree or paste – 1 cup
  • Chopped garlic – 1 tablespoon
  • Oregano and basil – 1 tablespoon (available in supermarkets)
  • Butter – 1/4 cup
  • All-purpose flour – 1/4 cup
  • Milk – 1 cup
  • Boiled mixed vegetables – 2 cups (cauliflower, carrots, zucchini, and bottle gourd, for example)
  • Eggplant slices – 1/2 cup (lightly fried)
  • Olive oil – 2 tablespoons
  • Sugar – to taste
  • Salt – to taste

Method for Preparing Vegetable Lasagna:

  • Begin by making tomato puree or paste. If you prefer, you can also use tomato sauce. To make the puree, boil and peel the tomatoes and blend them into a paste.
  • First, prepare the white sauce by melting butter in a saucepan. Once the butter is melted, add all-purpose flour and cook for a while.
  • Gradually, pour milk into this mixture while stirring continuously. Keep stirring to avoid lumps.
  • Once the mixture thickens and reaches a smooth consistency, add sugar and salt to taste.
  • In a separate pan, heat olive oil and add chopped garlic to it. Sauté the garlic until it releases its aroma.
  • Now, add tomato puree, oregano, basil, sugar, and salt to the pan and cook this mixture well.
  • Once the sauce thickens, add the boiled mixed vegetables and lightly fried eggplant slices. You can include cauliflower, carrots, zucchini, bottle gourd, or other vegetables as per your preference.
  • Create the lasagna by placing one roti on the bottom of an ovenproof dish.
  • Spread a layer of white sauce over the roti, followed by a layer of the vegetable mixture.
  • Sprinkle some grated cheese on top.
  • Continue this layering process, finishing with a layer of cheese on top.
  • Preheat the oven to 150°C and bake the lasagna for about 12 minutes.
  • Once baked, your vegetable lasagna is ready to be sliced and served.
